Pistachio cream is a sweet, spreadable blend of ground pistachios with sugar and milk or oil, known in Italy as crema di pistacchio. This guide explains how creams, butters and fillings differ and how to use them.

Pistachio cream, butter or filling?

Sweet pistachio creams were a pantry favorite in Italy long before the Dubai chocolate trend, especially in Sicily, where the protected-origin Bronte pistachio is prized. Dubai chocolate, which uses pistachio cream as its filling, sent demand much higher.

Today you'll find three main styles: sweet spreads (think a pistachio version of hazelnut spread), unsweetened pistachio butter made only from nuts, and thick bakery fillings designed to hold their shape, sometimes already mixed with crunchy kataifi.

How to choose

  • Pistachio content: many Italian jars state the pistachio percentage. Higher percentages taste nuttier; lower ones lean on sugar and milk powder.
  • Cream vs. butter: a 'butter' or '100% pistachio' spread is unsweetened nuts; a 'cream' is sweetened.
  • Oil: some creams add sunflower or palm oil for spreadability. Read the label if you prefer palm-oil-free.
  • Color: natural pistachio cream is usually a muted green; a very vivid green can come from added coloring.
  • Fillings: products labeled as fillings, or made with kataifi, are thicker and made for chocolate bars and pastries.

How to use pistachio cream

Spread it on toast or croissants, swirl it into yogurt or oatmeal, warm a spoonful into a latte, fill crêpes, or use it as the base for homemade Dubai-style chocolate. Most sweet creams are stored at room temperature after opening; follow the jar, and stir if the oil separates.

Frequently asked questions

Does pistachio cream need refrigeration?

Most sweet creams are shelf-stable after opening, but follow the label. Refrigeration makes them firm.

Is pistachio cream the same as pistachio butter?

No. Pistachio butter is ground nuts, usually unsweetened. Pistachio cream is a sweetened spread.

Can I bake with it?

Yes, as a filling for pastries, cakes and cookies. Thicker fillings hold their shape better in the oven than soft spreads.

Is it safe for nut allergies?

No. It is made from pistachios.
