Tinned fish has gone from pantry backup to date-night snack. Here's how to choose sardines, mackerel, anchovies and conservas, and how to serve them.

What are conservas?

In Portugal and Spain, conservas are high-quality fish and seafood preserved in olive oil, sauces or brine, and they've long been served in tapas bars. Brightly packaged tins from brands like Fishwife and Nuri, plus social-media 'seacuterie' boards, turned tinned fish into a US trend from around 2022.

Oily fish such as sardines, mackerel and salmon are valued for their protein and omega-3 fats, and small whole sardines with soft bones add calcium.

How to choose

  • Packing: olive oil gives the richest texture, water or brine is lighter, and tomato, spicy or escabeche sauces are ready to eat.
  • Size and cut: small sardines are tender, larger ones are meatier, and fillets are boneless.
  • Skin and bones: both are edible in canned sardines. Choose skinless and boneless if you prefer.
  • Sodium: check the label if you're watching salt, especially with anchovies.

How to build a tinned-fish board

Open two or three tins in different sauces and serve them with crusty bread or crackers, butter, lemon, pickles, olives and a spoon of chili crisp.

Sealed tins keep for years; check the date. Once opened, move leftovers to a covered container, refrigerate, and eat within a couple of days.

Which tinned fish is highest in omega-3?

Oily fish such as mackerel, sardines and salmon.
